It's the Jazz Fest food that makes most first-time Jazz Fest goers do a double take, it's the Gator On A Stick. It's alligator that has been covered in dough and then fried and then put on a stick. The best thing about the Alligator on a Stick is the fact that you don't need a spoon or a fork so you can have one hand free for your beer!
